What is MIGF?

The Malaysia International Gourmet Festival is a yearly celebration of the local fine dining landscape. Prepared only by the top chefs in the country, it’s an opportunity to experience the creativity works of the BEST through the recommended Festival Menus revolving around this year’s theme, ‘RED HOT CHEFS‘. It’s a month-long celebration from 1st to 31st October 2014 with 28 participating restaurants of different genre to experience.

With twenty over years of working experiences in the food and beverage industry specializing in the Western palate, Chef Mohd Radzuan Hamzah is contributing his expertise consecutively for the second time in the Malaysia International Gourmet Festival. Displaying a leadership quality, he placed great emphasis on teamwork among his co-workers as it is his source of inspiration in the creation of The Olive’s MIGF2014 Menu. His Festival Menu is based on the fusion concept of the contemporary and traditional cuisine which focuses on the unique presentation style and taste.

Buurps Experience

Our dining experience started off with what I’d like to call a “small wonder”, the Amuse Bouche – White Asparagus Tips topped with Sevruga Caviar, Dry Hibiscus Blossom and Chives. The unique presentation sparks much curiosity and wonder, it is very entertaining and most certainly a form of art itself.

Following the footsteps of the Amuse Bouche, the Smoked Salmon is another dish of unique presentation as the sliced smoked salmon was hung on a thin wire while having another wire that’s based on the plate piercing through. It was a pity that we had to dismantle this piece of art to savour the goodness of the sea.

Our meal was then followed by Duck Liver Mouse as starter, and Onion Essence. The Duck Liver Mousse is a tangy tasting delight that really gives a kick to the senses. The Onion Essence which is gruyere ravioli with parmesan stick brought and earthy feel to the course served, for what it’s worth – within the ravioli lies pieces of smoked duck, you can imagine how exhilarating each bite was.

Maine Lobster Crêpes was our entrée for the day – Quiona Risotto, Cognac, Caramelized Onion, Fresh Chives and Desiccated Coconut Saffron. This was followed by our main course – 1′ Pin Lamb Rack with Venison Loin, it comes with Almond Cauliflower Puree, Shallot Balsamico, Artichokes, Parsnip, Baby Carrot with Rosemary Mustard Sauce. The rosemary mustard sauce certainly added the touch to the aromatic lamb rack.

Lastly our dessert – Almond and Chocolate Spice that pretty much reminds us bombs, of course I was actually blown away by the dessert. The Chef Radzuan’s touch of brilliance here was memorable, to decorate the place with popping candy (Read : Pop Rocks) mixed with cake crumbs. Within that bomb-like globe lies chocolates, nuts and orange – talk about mind-blowing experience.

Impressed by the playfully unique presentation style, the fine dining course meal delve into a broad spectrum of our senses, namely the sight, smell, touch, taste and hearing and good combination of a wide range of taste and flavours to experience. The experience embodies the expressions and the witty surprises from Chef Mohd Radzuan Hamzah.

The flavours and taste keeps us guessing about the ingredients, leaving us curiously in wonder. The experience is liken to some extend the science game of ‘black box’. Without a doubt, it’s a creation of a curiously playful Menu theme.
