Standing tall and overlooking the Petaling Jaya city skyline, Signature by the Hill is one of the most sought after venue in Klang Valley. With its unique view and elegant contemporary interior, it is a trendy gastrolounge that offers Asian and International fusion cuisine. Signature is one of the five unique experiences found at The Roof, an integrated F&B and entertainment hub that has redefined the night scene of Klang Valley and it’s not planning to stop there. As a big step forward, it is engraving its Signature for the first time in the fine dining scene in Malaysia with its participation in the MIGF 2014 spearheaded by Chef Shahrezal Ibrahim, the Head Chef at The Roof and assisted by Chef Desmond Augustus.
What is MIGF?Malaysia International Gourmet Festival is a yearly celebration of the local fine dining landscape. Prepared only by the top chefs in the country, it’s an opportunity to experience the creativity works of the BEST through the recommended Festival Menus revolving around this year’s theme, ‘RED HOT CHEFS‘. It’s a month-long celebration from 1st to 31st October 2014 with 28 participating restaurants of different genre to experience.
MIGF 2014 Menu of Signature
Pioneering Signature‘s first journey in the MIGF landscape, both Chef Shahrezal Ibrahim and Chef Desmond Augustus are playfully dipping their toes in the creation of the Festival Menu. They are taking Festival Diners on a casual approach yet not totally veering off from the fine dining platform.
Chef Shahrezal Ibrahim has twenty over years of working experiences in the food and beverage industry and has been fine tuning his expertise and style ever since. With the local and international working experience, he ensures his kitchen complies to all the HACCP procedures and guidelines in order to churn out top quality food with consistency. With the assistance of Chef Desmond Augustus who has a passion for infusing the best of both Asian and Western cuisine, they both make a perfect pair in the creation of the MIGF 2014 Festival Menu.
The inception of the Festival Menu is the first of its kind – to give Festival Diners a twist to the fine gastronomic adventure as the concept of self-articulation is with the intention of bringing in the fun side of the finer food. The OPTION for choices is the KEY to its concept, catering to the individual preferences of each Festival Diners. Unlike the norm of fine dining scene, the Signature‘s Festival Menu allows Diners to play with the ingredients to suit their palate in which is capable to evoke the creativity and imagination of any Festival Diners.
Since it is an Asian and International fusion cuisine, the familiar local taste is not forgotten in the Festival Menu as both Chef Shahrezal Ibrahim and Chef Desmond Augustus have cleverly devise their interpretation of the MIGF 2014 theme of the ‘RED HOT CHEFS‘ yet bringing the fun side of the finest gastronomic journey.

Festival Diners are encouraged to take pictures of their food and share them on Instagram using the hashtag #signatureinstamenu. A weekly winner with the best picture and tag line will be selected and featured on social media platforms as well as the new menu Insta section. A price/cash voucher will be given to these winners.
The dining experience at Signature is one out of the norm in the fine dining landscape where our innate desire tucked close at heart is comforted while our senses, creativity and imagination are tested throughout the course. The idea of fusion cuisine has no political and geographical borders as it allow us to savour foreign ingredients in our everyday lives. It’s the experience that has greatly enriched and stimulated our palate. It’s a fun and playfully exciting dining module that forces diners to erase any expectation but to put on a neutral mind while the waiting game comes to play. To coin it, it’s a culinary adventure that provoke the unexplored aspect of our emotions.
Without further ado, allow me to introduce the introductory dish that’s the introduction of Signature’s MIGF 2014 Menu – the Signature Summer Salad! It is Soft Shell Crabs served on a Bed of Arugula with Signature Tangy Mango Summer Salad, the delicious crispy critter laid on greens, a great way to begin the night by having a dish that’s light yet comes with wealth of taste.
Up next, the MIGF Menu swept to the shore of our table the Signature Clear Coconut Seafood Soup. A delicious seafood that gives a “Tom yam” kind of feel, clear soup that’s a mix of sweet, sour and spice to make everything nice, of course the chef included other condiments should you find the need to “Level up” the flavour.
Moving along with the course were the mains. Diners have a choice of one of the 2 main dish offered.
The New York Striploin comes coated in Teriyaki Glaze and served with Saffron infused Capelini and Sautéed Veg Bowl. Asian-looking dish with an American name? Yes it is but it’s delicious, the striploin comes in medium and it’s up to you to decide how well you want it to be, talk about passing the work to us! 😛 Haha, just kidding. In fact I’m pretty pleased with this idea, I like it that I get to be part of the team preparing my food to my liking, having the striploin placed on the miniature grill for about 1 minute to each side and you get the meat at medium-well which is just nice in my book. The taste was no doubt one that makes you wish there’s more of it, I love the aroma from the beef and its fats as I take my time chewing it through. The fine capelini and veg bowl were a neat touch to both presentation and taste.
And alternative main course should you be less included to meat would be the Crispy Baramundi – served oriental style and Vietnamese Glass Noodles. The fish was tender and fresh, and I like it that they had the skin being slightly crispy. The vietnamese glass noodle that comes along with it was great too.
We ended our course with dessert that’s called – Signature Cendol with a Twist, uniquely presented on a bowl of red liquid that’s spewing smoke around the bowl. The dessert comprises of homemade Coconut Ice-Cream, Pandan Mousse, Red Beans and Palm Sugar Brittle.
Put it simple, the dishes were “meant to be played” and I thoroughly enjoyed playing with my food, especially the New York Striploin. 😀
