A specialty grain is any brewing grain other than plain malted barley. Plain malted barley is the basis of beer. Barley from the field is made ‘brewable’ by putting it through the malting processes.

Specialty grains are added to enhance the properties of beer. It starts off just like all other malted grains, but they go through additional malting processes to add color, flavor, aroma and unique characters. Without specialty grains, only a few beer styles can be made.
