Before we begin, here’s a quick info about seaweed.

Seaweeds are among the healthiest foods on the planet, packed with vitamins, minerals, and antioxidants. They’re great for the waistline, too: A 2010 study found the algae can reduce our rate of fat absorption by 75 percent, thanks to its inhibitory effect on a digestive enzyme called lipase.

The dried wakame seaweeds are brittle, crunchy and hard in texture and it expands into soft, soggy, resilient pieces after soaking in the water for about 5 minutes. The recipe we used is simple and no actual cooking is involved and the preparation time is only a brief 5 minutes of soaking the contents in cold water, following by 3 minutes of rinse.

A quick bite of the raw expanded wakame seaweed reveals its bland taste with a hint of flavours of the seas. The salad dressing of the recipe plays a major role of infusing the flavours of the wakame seaweed with the rest of the ingredients making each bite a flavourful experience, with a chewy and crunchy sensation due to the seaweed’s resilient texture.

Prior to soaking the seaweed flakes resemble potpourri as it is purple in colour, fluffy, soft and with rough edges, and it disintegrates easily when force is applied. It has a strong flavour of the sea and requires a bath in the hot water for at least 3 minutes, the brief cooking is MUST to remove any dirt.

With this procedure, the flakes turn brown and changing the colour of the water. The seaweed turns soft and soggy, and taste wise it is mildly salty. The eating experience mirrors the ready-made nori seaweed sheets. The recipe is simple, the cooking time is brief and the ingredients of the salad are few. It is a splendid healthy choice of salad, perfect for any health conscious diners.

The dried kombu seaweed are thin, hard and plastic-like textured and it comes in variety of shape, size and thickness. It is flexible, bendable but breakable when force is applied. The surface has fine white film which is said to be normal but not harmful. To remove the white film, it is advisable to wipe the surface with a damp cloth or washing it before use. It has a mild flavour of the sea and slightly salty in taste.

The recipe suggests that the dried kombu seaweed and bonito flakes be boil so the ‘umami’ flavours and taste of both ingredients are transferred to the broth. The seaweed expands in size and it turns soft, chewy and bland once it is removed from the broth. A sip of the broth will transport you back to those moments of dining at a Japanese restaurant.
